Scottish producer uses artificial intelligence to create rare whiskey for $50,000

Diageo has combined new and old to create two rare bottles of whiskey priced at $50,000. The new product is an artificial intelligence technology called SmokeDNAi, which enables to study the process of aging whiskey in barrels.

Diageo has invested nearly $44 million in whiskey aging research and brought the Ghost Port Ellen distillery back to life with the rare Port Ellen Gemini whiskey. The technology opens the door to analyzing the taste characteristics of non-identical double whiskeys distilled in different barrels—residual and original.

There were differences in vanilla characteristics between the two Port Ellen whiskey casks; one contained about 3% and the other—about 6%, Fox News reported. The remaining cask contained spirits from the 1960s and 1980s, according to national luxury ambassador and head of whiskey operations at Diageo North America, Evan Morgan. “We want to achieve that wonderful slow maturation in the barrel where we control the flavor,” Morgan told Fox News Digital.

The process requires whiskey samples to undergo chemical analysis followed by gas chromatography, and data sets of individual components are broken down using an algorithm. Connoisseurs can observe flavor combinations, aromas, and profiles invisible to the human eye. “In the visual image, you'll see small amounts of a single particle moving,” Morgan said.
