Armenian salad according to Charles Aznavour’s recipe

The Sinatra Celebrity Cookbook: Barbara, Frank and Friends is the title of the book by the legendary American singer, who was also an avid cook. It is in this book that the recipe for the Armenian salad, which legendary French Armenian chansonnier, the late Charles Aznavour shared with the singer, is preserved.

And on the occasion of the 100th birth anniversary of Aznavour, we share with you his variation of the Armenian chicken salad.

Ingredients:

1/3 chicken breast, skinless and boneless

300-400 grams of tomatoes

300 grams of sour apples

3 hard-boiled eggs

2 bunches lettuce leaves

1/3 cup butter or olive oil

Salt to taste

Fry the chicken breast with salt in a frying pan for a couple of minutes, then add a little water, cover and let it steam. Then cut the chicken into thin slices.

Cut tomatoes and apples into cubes, after peeling and removing seeds.

As a dressing, the chansonnier suggests using 1/3 cup of mayonnaise, 1/3 cup of ketchup, 1 tablespoon each of onion and celery salt, a finely chopped bunch of parsley, the juice of 1 lemon, and 1 teaspoon of brandy.

Sharing this recipe in the book, the singer added: “I hope my broken English will be clear to the readers of your cookbook and they will also enjoy my simple recipe.”
