The Dubai-based Greek chef and entrepreneur has quietly built a massive culinary empire that extends far beyond the traditional restaurant scene. Today, his business portfolio boasts 14 venues across the UAE, an elite catering service tailored for Ultra-High-Net-Worth (UHNW) clients, and a network of 10 personal chefs operating throughout Greece.
His roster of regular clients reads like a Forbes billionaire list and a Hollywood red carpet combined: Amazon founder Jeff Bezos, Formula 1 champion Lewis Hamilton, rapper Travis Scott, Bollywood megastar Shah Rukh Khan, and members of various royal families, including Sheikha Mahra.
For a man who has cooked for the planet's most influential figures, the concept of "luxury" is far simpler than the general public might assume.
"People often think that celebrities and billionaires demand something incredibly extravagant, but in reality, it's exactly the opposite," Chef Sperxos shares. "The most successful people I’ve cooked for appreciate absolute simplicity, elevated to the highest level and executed flawlessly."
His customized menus offer everything from truffle-infused Wagyu and grilled lobster to the freshest Mediterranean seafood and bespoke tasting courses tailored to his guests' exact personal preferences and dietary goals. For professional athletes, the dishes are heavily focused on performance, stamina, and recovery.
Among his signature dishes that have won over the global elite are wild sea bass served with seasonal vegetables in a delicate cream sauce, premium Wagyu beef with organic sides, and peak-quality caught seafood.
"Jeff Bezos, Max Verstappen, Travis Scott, and top-tier footballers all share something in common," the chef notes. "They aren't chasing flash or pretense. They are chasing pure quality."
Understanding what affluent clients truly value allowed Sperxos to look past the boundaries of being a traditional "private chef." He capitalized on the rising trend of ultra-personalization early on, building a luxury hospitality business capable of serving a high-profile client anywhere: aboard a superyacht, inside a private estate, or at an exclusive gala evening.
The strategy has paid off massively. This year alone, the Sperxos empire expanded with the openings of The Dish at the Palm Jumeirah Mall and Readles by Chef Sperxos at the Dubai Mall, bringing his total venue count in the UAE to 14.
Despite the glamor of working with global icons, Sperxos admits that his greatest professional hurdle lies elsewhere.
"Without a doubt, building a restaurant business is much harder," he says. "Cooking a dinner for a billionaire means one service, one table, and one evening. But managing restaurants means waking up every single day and delivering that elite standard of quality to every guest who walks through the door."
Assembling top-tier teams, streamlining operational systems, and maintaining consistent quality across 14 separate locations simultaneously requires management skills that rival handling even the most demanding VIP client. This very experience has ultimately shaped his core philosophy of hospitality.
"True hospitality isn't about catering exclusively to celebrities. It’s about making absolutely every guest feel important," says Chef Sperxos. "Cooking dinner for a billionaire is a privilege. But making an everyday guest feel like a billionaire—now that is the ultimate challenge."
