A special recipe for the New Year from the famous chef Ara Zada

Armenian-American chef Ara Zada likes celebrating Christmas with his family and there is no celebration without delicious food.  "We do most of our celebration on Christmas Eve. We all get together at either my house or my mom’s house and do a big Christmas feast along with many fun, family Christmas games we play all together," he  says. In his interview with NEWS.am STYLE, the famous chef also shared his favourite recipe for New Year. 

"For New Year’s Eve we definitely have a huge full table with a ton of food. Appetizers are always a big part of it for us with lots of fun finger foods to choose from. On the dinner table we always have the traditional dishes that you would see like Dolma, Sarma, kubebah (or ishli kufte) and we definitely have a big plate of chikufte and usually we do one main dish, either a prime rib roast, sometimes a turkey or a whole pig roast. Although the prime rib roast is one of my favorites and also one of the easiest to make.

How to cook it? 

4lb prime rib roast
2 sticks butter, softened 
1 sprig rosemary
1 tsp thyme  
2tsp salt 
1tsp pepper

"Pre heat oven to 500. Mix butter and seasonings together. Rub butter mixture all over roast, place on a sheet tray with a rack and into oven. Cook for 5 min per pound of roast. So for a 4 lb roast cook for 20min. This is the important part. Turn off the oven and DO NOT OPEN THE DOOR FOR 2 HOURS! After 2 hours pull your roast out and let it rest for 15-20 min.You’ll have a perfectly cooked  Med-Rare prime rib."
